NORTH CALDWELL, NJ – Guest Chef Renato Colanbrea of Pomptonian Food Service prepared homemade mozzarella for West Essex High School students during unit lunch. Students watched the chef at work as he made homemade mozzarella and explained the whole process to interested students.
“You separate the raw milk from the whey,” he explained to students.
He also made some mozzarella stuffed with garlic-sauteed broccoli rabe and gave samples to students last week.
West Essex Regional School District’s Food Service was recently ranked No. 8 in New Jersey by Food Service Director Magazine.
